* Golden crispy fried frog legs is one of Khmer favorite appetizers. Ingredients
o 1 lb Skinless frog legs
o 2 Cloves garlic,minced
o ¼ Teaspoon salt
o ½ Teaspoon soy sauce
o Dash black pepper
o BATTER:
o 1 Cup All purpose flour
o 1 Cup ice cold water
o Dash of salt
o 6 Cups vegetable oil for deep fry
* Procedures :
In a large bowl, put frog legs with garlic, salt, soy sauce and black pepper. Set a side.
In a small bowl, mix ice cold water with salt. Mixed well.
Heat up cooking oil in a frying pan or wok on high temperature.
When oil hot, dips frog leg in flour batter and drops it in hot oil.
Deep-fried frog legs till golden brown.
Removes frog legs from hot oil and put it on a plate covered with paper towel to drained.
Serve hot with ginger fish sauce dipping, and carrot and daikon relish.

Fried Frog Legs Recipe
2 to 2 1/2 pounds large frog legs
1/3 cup lemon juice
crushed ice
1/3 cup milk
2 eggs -- separated
2 teaspoons vegetable oil
salt and pepper
red pepper
2 cups all-purpose flour
vegetable oil for deep frying
Wash frog legs thoroughly. Place in a large bowl; sprinkle with lemon juice, and cover with crushed ice. Refrigerate 1 to 3 hours. In a small bowl, whisk together milk, egg yolks, and 2 teaspoons oil. Beat egg whites until stiff; fold into milk and egg yolk mixture. Sprinkle frog legs with salt, pepper & red pepper to taste; dip each in milk-egg mixture, then dredge in flour. Heat vegetable oil in a deep-fryer or skillet to 375 |
