WHY

The stem of "mangiare" is "mangi-", the suffix of tu is "-i".

If you expected "mangi-i", "mangi-iamo" you were right.

However, in these circumstances the language gets rid of the redundand vowels.

The same applies to studiare, for instance.

MODENA - Le condizioni di Luciano Pavarotti si sono ulteriormente aggravate. Da un paio di giorni le voci sullo stato di salute del tenore si rincorrono a Modena. Secondo alcune indiscrezioni di fonte medica, l'artista si trova "in condizioni gravissime e seguito con terapia di supporto" dagli oncologi dell'ospedale nella sua abitazione, trasformata in un "ospedale da campo". Avrebbe anche perso conoscenza "in alcuni momenti" e la situazione sanitaria sarebbe stata aggravata da alcune complicazioni.
