Number Wan for Thai food
ALAN TEH LEAM SENG

Keen to try something new in Langkawi, ALAN TEH LEAM SENG bravely steps into a quaint restaurant that’s off the main road in Kuah

The slender asparagus in this non-spicy dish are crunchy.  The Hor Muk Mar Pau Onn costs RM17 and is enough for three adults.
The slender asparagus in this non-spicy dish are crunchy.
HOW can you be sure of getting a good meal in a restaurant that you’ve never been to before? Easy. Just order the house favourites and you will seldom go wrong.

You can always be more adventurous and try the other dishes on a next trip.

That was exactly what I did when I went food hunting in Kuah, Langkawi’s largest town. Walking away from the main road with the rumbling of my tummy almost audible, I caught sight of a quaint restaurant with rather attractive decor.

It was early evening, not the usual time Malaysians have their dinner and yet the restaurant was already half filled. I walked in hesitantly, wondering what to expect, when a petite woman approached and led me to a table.

She spoke to me in Malay but to the restaurant staff, she spoke Thai. I found out later that she was the owner. Arina Abdullah had been running the restaurant for the past 12 years.

Her team of three chefs and 25 support staff ran the restaurant like clockwork, no matter how packed it was. Depending on where she’s needed, Arina can be found in the kitchen or waiting on customers.

“I need to be versatile. When any of my workers falls ill or has an emergency, who else can fill the position but me? I even prepare some of the desserts,” said Arina who is fluent in Malay, Thai, English and Hokkien.

Warm In Coconut

I was ravenous, so I asked Arina to get me a few house favourites. I did insist that the spicy Thai tom yam soup be included.

She served me a combination of four seafood dishes. It was obvious that diners were not keen on meat in this Thai restaurant.

I especially liked the Hor Muk Mar Pau Onn, the Thai version of otak-otak. This seafood, egg and coconut custard was steamed inside a young coconut. This way, the custard was kept hot and using pandan-flavoured coconut water to prepare the dish added to its fragrance.

The Hor Muk went well with white rice. Scooping out the contents was like digging into a treasure chest and not knowing what was emerging next. There were squid, fish and prawn mixed with slices of coconut - a delicious combination that was surprisingly not very spicy.

Eat Fish Fast

Next came the Pla Yam, deepfried seabass (ikan siakap) topped with a young mango salad. You have to act fast with this dish and eat it as soon as it is served or the salad will turn the crispy fish rather leathery. I liked the way the cashew nuts gave the dish an extra crunchy texture.

In my unabashed feeding frenzy, I did not realise that my rice was almost gone until a young waitress came to refill my plate. What attentive service!

Fresh Fare

The prawns in the tom yam were huge and very fresh. The soup was prepared according to the chef’s own combination of spices. Arina said the ingredients were brought in daily by ferry from Thailand.

Nor Mai Farang Phad Namman Hoy completed my delightful experience. The fried asparagus in oyster sauce provided a balance of flavours to the otherwise spicy meal. The asparagus stalks were slender and crunchy.

Arina’s interest in Thai food started when she observed her mother and maternal grandmother preparing meals for the family.

Cooking soon became a passion and she opened Wan Thai Restaurant to share her Bangkok-style cuisine with the people in Langkawi.
