WASHINGTON (AFP) - A US doctors' group has sued seven leading fast-food chains including McDonald's and Burger King over their use of a "dangerous carcinogenic" in grilled chicken.


The Washington-based Physicians Committee for Responsible Medicine (PCRM) filed suit in California Thursday "to compel the restaurants to warn unsuspecting consumers".

The group said every sample of grilled chicken products from the seven national chains "tested positive for a dangerous carcinogenic compound called PhIP" during analysis at an independent laboratory.

PhIP is one of a group of carcinogenic compounds called heterocyclic amines (HCAs) that are found in grilled meat. In 2005, the US government officially added HCAs to its list of cancer-causing agents, the doctors' group said.

"Grilled chicken can cause cancer, and consumers deserve to know that this supposedly healthy product is actually just as bad for them as high-fat fried chicken," PCRM president Neal Barnard said in a statement.

"Even a grilled chicken salad increases the risk of breast cancer, prostate cancer and other forms of this lethal disease," he said.

Aside from McDonald's and Burger King, the chains named in the lawsuit were Chick-fil-A, Chili's, Applebee's, Outback Steakhouse and TGI Friday's.

Carcinogen
In pathology, a carcinogen is any substance or agent that promotes cancer. Carcinogens are also often, but not necessarily, mutagens or teratogens.

Carcinogens may cause cancer by altering cellular metabolism or damaging DNA directly in cells, which interferes with normal biological processes. Aflatoxin B1, which is produced by the fungus Aspergillus flavus growing on stored grains, nuts and peanut butter, is an example of a potent, naturally-occurring microbial carcinogen.

Cooking protein-rich food at high temperatures, such as broiling or barbecuing meats, can lead to the formation of many potent carcinogens that are comparable to those found in cigarrette smoke (i.e., benzo[a]pyrene).[1] Pre-cooking meats in a microwave oven for 2-3 minutes before broiling can help minimize the formation of these carcinogens.

Benzene, kepone, EDB, asbestos, and the waste rock of oil-shale mining have all been classified as carcinogenic. As far back as the 1930s, industrial and tobacco smoke were identified as sources of dozens of carcinogens, including benzopyrene, tobacco-specific nitrosamines such as nitrosonornicotine, and reactive aldehydes such as formaldehyde

aku dulu pnah bace asap dr ayam panggang/satay bleh menyebabkan barah paru2...kandungan karbon dlmnya amat lah bahaya...serupa kita sedut asap kete takde filter..
