Ada masak hari tu ikut resepi aziekitchen. Senang ikut

Sedap la jugak

Sambal Udang Petai
Oleh: Azie Kitchen

Bahan bahan:
Udang - lumur garam dan serbuk kunyit, jika suka
1 mangkuk petai
1 sudu besar sos cili
1 sudu besar sos tomato
1 biji bawang besar Holland - hiris
Garam
Gula
Serbuk perasa
Minyak masak

Bahan kisar:
10 ulas bawang merah
6 ulas bawang putih
Sedikit belacan - opsyenal
5-6 sudu besar cili kering kisar

Cara cara:
Panaskan minyak dan goreng udang seketika sahaja. Angkat udang dan ketepikan.

Menggunakan minyak yang sama, tumis bahan kisar dengan api perlahan sehingga cili benar benar garing. Setelah garing, masukkan gula terlebih dahulu. Kacau rata dan masukkan sedikit air.

Kacau rata sehingga sambal pecah minyak dan cantik. Setelah sambal cantik, baru dimasukkan udang. Kemudian masukkan sos tomato dan sos cili.

Setelah bergaul rata, masukkan garam serta serbuk perasa.

Akhir sekali, masukkan petai dan bawang besar. Jangan masak lama kerana kita mahu petai yang masih rangup. Kacau rata. Angkat dan sedia untuk dihidangkan.

Ade dgr makcik2 sembang..masakan brkuah yg guna udang kene rebus kepala/kulit blend n tapis...air tu masuk dlm masakan...i olls pernah la try utk laksa sarawak n mee udang...mmg sedap manis n umph!!!..

style i buat sambal udang + petai, untuk niaga sekali memang laku, Alhamdulillah.
- bwg merah blend (lebih sikit lebih sedap)
-cili kering (anggar2 je)
-belacan (optional)
-air asam jawa pekat
-garam
-gula
-minyak masak

1) Panaskan minyak masak. Masukkan bawang blend. Tumis2 sampai nampak garing baru masukkan cili kering + belacan. Belacan jangan banyak sangat nanti dia ada rasa 1 macam.
2) Masak sampai cili kering tu masak, pecah minyak.
- pecah minyak means minyak da terapung dekat atas sambal, sambal nampak garing.
3) Masukkan air asam jawa + petai.
iols masukkan petai sekali awal2 sebab tak minat petai rasa mentah2.
4) Kacau2 lagi, rasa la garam gula camne. Nampak mcm da kering baru masukkan udang. Jangan tambah air sebab air udang tu dah ada. Nanti sambal jadi cair ceroi sgt.
5) Biar dalam 10 minit camtu (bergantung kuantiti udang) baru balik2 kacau2. Mayang bawang besar, tabur atas, siap

Kalau cara aku kan...lps goreng udang tu  aku masukkn petai kejap...nnt minyak tu akn ada bau udang dan petai...nyummy
