k noor kat tengah2 tu la yg merekah tu...
sorry la k noor, sebenarnyer resepi tu chanel punya...tapi k noor promotekan kek ni sedap sebab k noor dah buat...penat den bukak dari 1-40....nak cari balik btul ke resepi kak noor nih...
memang sedap cuma saya tak puashati tang merekah tu, tak cantik jadinyer...nanti saya improve balik la

ha ha ha tu la pasal akak heran bin ajaib, akak nya resepi tak de buh apa2 dlmnya...akak hanya tempek satu je resepi kek keju iaitu kek keju gebu (segebu tuannya ):bgrin:

saje saya tambah oreo...sebab teringin sangat nak makan oreo cheesecake...
lengkali nak cuba resepi k liza lak...
Resepi cheesecake yg lagi satu tu kan...yg jenis tak bakar tu...saya simpan lagi dalam peti ais..petang tadi potong sikit makan, makin sedap lak...memang cheesecake  ni makin lama kita simpan dalam peti ais makin sedap ke?..
Satu lagi nak tanya..cheesecake ni yg jenis bakar tu kan, kalau dalam resepi kata bakar dalam 1 hour, meaning...1 hour je tutup api, renggangkan sikit oven tu dalam satu jam lagi,then baru masuk peti ais kan...walaupun cheesecake tu masih lembut lagi tang tengah dia..cam tu ke?:stp:

so tin yg di balut dgn aluminium foild tu letak bawah sekali bekas yg berisi air tu ker? sorry ler byk tanya

kkaliza tolongjawabkan soklan bakar steam baked..
letakkan loyang yg berisi bahan kek dalam loyang yg lebih besar berisi air...
masukkan semua loyang dalam oven dan setkan suhu saperti yg disyurkan..

k liza, kalau kita pakai loyang kek cam gambo kak liza letakkan tu, letak lak air kat bawah dia, nanti air tu tak masuk ke kat dalam kek tu...cam meresap ke..?:stp:

memang selalunya masuk air gak ..
tapi apa ybg selalu kakliza baca...depa balutkan loyang yg berisi kek tu dengan alunimun foil dan baru letakkan dalam loyang besar sikit berisi air..
pastu masukkan dalam oven dan bakar..

kak liza ada belajar.. masukkan air dlam loyang..pastu letakkan di teingkat bawah..
manakala loyang berisi kek..letakkan tetingkat atas sikit..
so adalah wap kat dalam oven tu..

tetapi oleh sebab angin M ada jugak sekali sekala...
so kkaliza renggangkan pintu oven tu sikit..suhu antara 140 -150"C dan bakar selama 70 -80 minit..

rasanya ada petua..leas siap masak..just biarkan kek keju dalam oven untuk bereapa jam.
pastu baru letakkan dalam petisejuk..
oh my..oh myyyy..terasa sedap jer kek keju ni..

balut dengan aluminium foil dulu;  lapis double or triple to ensure supaya tidak masuk air....

sunshine, kalau kek tu merekah atasnya, shida tutup dengan blueberry filling. so tak de lah nampak merekah :cak: kek ni bila letak dalam peti ais baru sedap makan. kek ni category dessert jugak.

Coffee Cheesecake






Base

125 gm Butter
1 tbsp Instant coffee powder mixed with 1/2 tbsp hot water
200 gm Digestive biscuits,finely ground
40 gm Light brown sugar
50 gm Ground almond/hazelnut

Greased then line the base of a 23 cm springform tin.
Melt butter in pan over low heat,stir in coffee mixture,finely ground biscuits,ground almond/hazelnut and light brown sugar.
Stir till well mix and just fragrant.(carefull not to burn the mixture)
Press the biscuits mixture evenly into prepared springform tin with the back of a metal spoon.

Melt 60 gm of Dark cooking chocolate(chopped finely) with 2 tbsp UHT Chocolate milk or normal fresh milk over double boiler(at low heat).
Pour the melting chocolate mixture over biscuits base,spread evenly and refrigerate till needed.

Filling

500 gm Cream cheese
150 gm Light brown sugar
2 1/2 tbsp Instant coffee mixed with 2 tbsp hot water
2 tbsp + 2 tsp Cornflour,sifted
4 Eggs,light beaten
300 ml whipping cream (Dairy)

Preheat oven to 140'c.
This cheesecake is steam-bake.
Wrap the outside of the springform tin with heavy-duty aluminium foil to prevent water from seeping into the pan.keep in fridge while prepare the filling.
Beat cream cheese and light brown sugar till smooth.
Add in the coffee mixture and sifted cornflour,stir till well mix.
Pour in lightly beaten eggs and stir till well combine.
Pour in the whipping cream and blend until mixture thickens.
Pour filling on prepared biscuits base and place the tin in a larger pan, then filled the larger pan with hot water about 3/4 full.
Steam bake the cheesecake at lowest rack/shelf of the oven for 1 hour and 10 minutes or untill filling is set but slightly soft in the centre.
Turn off oven and leave the cake in oven for 30 minutes with door closed.
Remove water bath and leave cake to cool in oven with door ajar.
Chill cake in fridge for 5 hour or overnight.

Topping

200 ml Whipping cream,whipped till slightly thicken
30 or 50 gm icing sugar,sifted (depent how sweet you like)
2 tsp gelatin + 40 ml water
1/2 tsp vanilla essence (Optional)

Stir sifted icing sugar into the thicken cream.Set aside.
Dissolved gelatin over double boiler (at low heat) until mixture clear.
Stir the thicken cream non-stop while adding the hot gelatin.Stir till well combine.
Add in vanilla essence if use.
Pour the thicken cream mixture over cooled cheesecake and refrigerate till topping set.
Unmould and decorate cheesecake with piping melted chocolate and coffee bean.
Slice cheesecake with a warm knife into THIN slices.

NOTE: this is a very RICH cheesecake and is a perfect dessert after a light meal
