tart chocolate filling

saya sedang mencari resepi tartlet yg fillingnya chocolate. saya pernah mkn di rumah member, tartlet nya comel2 mcm fruit tartlet tapi fillingnya, chocolat, ada yg diletak chocolate chip dlm nya. Saya tak taulah dia pakai chocolate sahaja atau pun dicampur dgn cream cheese tapi mmg warna chocolate btul2.  Kalau ada kawan2 yg ada resepi ni, bolelah kongsi bersama.. tq

Mmg kkdg kita kan sini pun gitu. Pegang letak, pegang letak. Hari tu ternampak lak kat kedai ada jual muffin tin/patty tin yg loose bottom. Mcm you jugak lah, pegang letak, pegang letak. Skrg ni teringin2 pulak. Kan bagus kalau ambik je. Tak de lah termimpi2 pulak nanti.

kat sana ada tak yg bentuk 4segi, love ke...
kat sini tak pernah jumpa..
klau yg bentuk sampan tu kecik sgt..

klau tgk dlm buku sweet treat chef wan...mcm2 paten dia ada...

untuk kulit tart tu u bleh refer mana2 resepi kat sini..dan utk intinya plak u bleh try one of the resepi kat bawah nie..
saya amik dari nina fotopages, one of our forumer gakk..

Bahan Inti

250 gm cream cheese
100 gm telur (lebih kurang 2 biji telur gred B)
70 gm gula icing
70 gm sour cream (boleh juga gunakan yoghurt perasa asli)
10 gm serbuk koko (kita guna dlm 1 sudu kecil)

Putar cream cheese hingga ia sebati dan lembut. Masukkan gula icing dan kacau lagi. Kemudian tuangkan telur sedikit demi sedikit sambil dikacau. Masukkan sour cream dan kacau lagi. Ambil sedikit adunan ini dan campurkan dengan serbuk koko untuk penyediaan swirl/marble mengikut suka masing2.

Tuangkan inti ini ke dalam bekas tart yang telah sedia tadi sehingga 80% penuh, kemudian buatkan marble/swirl dan bakar semula adunan tadi selama 8-10 minit (adunan cheese tidak bergoyang). (Waktu ini disyorkan membakar tart menggunakan tingkat tengah supaya bawah tart tidak cepat hangus)

Yg loosebottom kecik2 tu so far I baru jumpa yg bulat. Yg lain2 shape belum terjumpa lagi. Tapi kalau yg non loosebottom tu mmg banyak lah. Mcm2 pun ada, samada silicon atau yg biasa punya.

Yang I punya gini. Satu bungkus tu ada 3-4 keping. Ini semua utk mini cake or cupcake besar sikit. Satu harganye lebih kurang AU$8.00 +- RM24.00

Aalst Indulgence Chocolate Tart



Ingredient:
- 100gm Chocolate Line 58% Pure Dark Couverture
- 120ml cream
- 1tsp unsalted butter

Sweet shortcrust pastry:
- 225gm plain flour (pre-sieve)
- pinch salt
- 115gm unsalted butter
- 1nos egg yolk
- 2tbsp iced water

Method:
1. Sweet shortcrust pastry: mix the flour, salt and butter together, using the rubbing method.
2. Then, add in water and egg yolk, knead and press the dough into a ball shape. Flatten the dough to an even thickness using the rolling pin.
3. Cut out the dough using a round cutter and place it into a small non stick mould. Bake it at 165oC for 7-9 min or until the dough is cooked, then set aside.
4. Melt Chocolate Line 58% Pure Dark Couverture in a bain marie, then add in the cream and butter.
5. Pipe the chocolate mixture into the pre-baked sweet shortcrust pastry.
6. Chill before serving.

sebab pastry tu nampak macam fragile je, tapi your tarts cantik sungguh, tak pecah.
