Ingredients
Crab Salad:
1/4 cup finely chopped bell pepper
1/2 cup mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon hot pepper sauce (recommended: Tabasco)
1/2 lemon, juiced
2 tablespoons chopped parsley
Salt and freshly ground black pepper
2 cups lump crabmeat, picked free of shells
Hollandaise Sauce:
2 egg yolks
4 tablespoons cream
4 large tablespoons butter, room temperature
1/2 lemon, juiced
Dash cayenne
Pinch salt
Pinch sugar
1 tablespoon white vinegar
Poached Eggs:
3 cups water
1 tablespoons white vinegar
1 teaspoon salt
4 large eggs
Parsley, for garnish
Cheesy biscuits, to serve
For the Crab Salad:
Directions
In a large bowl, whisk together all ingredients except for the crab and red peppers. Gently fold in the crab and peppers. Reserve.
*Cook's Note: When mixing the crab and peppers, be careful not to break up the crab too much.
For the Hollandaise Sauce:
Combine all ingredients, except the vinegar, in the top of a double boiler, over boiling water. Whisk until thick, approximately 3 minutes; set aside until ready to use. Do not reheat or cover the pot. Thin, if needed with a little chicken broth. Stir in the vinegar.
Bring the water, vinegar and salt to a low simmer in a medium saucepan.
Crack an egg into a small ramekin and gently slide the egg into the water. Crack another egg into the same cup and while the water returns to a low simmer, slide the second egg into the water. Repeat. Let lowly simmer until the eggs are set. This will take about 2 to 3 minutes for soft runny yolks. Remove with a slotted spoon onto a paper towel lined plate.
To Plate:
Top a cheesy biscuit with a poached egg. Add a small scoop of crab salad on top of the egg. Spoon the hollandaise over the egg and garnish with parsley. Serve immediately. |

Bahan Inti
4 biji epal hijau [potong dadu]
100 gm gula perang
1/sk serbuk kayu manis
2 s/b tepung gandum ]
3 s/b air ] bancuh
Cara
1. Masukkan epal dan gula perang dalam periuk dan masakkan sehingga layu.
2. Masukkan serbuk kayu manis dan kacau rata.
3. Masukkan bancuhan tepung gandum dan kcau rata.
4. Sejukkan.
Bahan Doh
200 gm majerin
50 gm shortening
50 gm gula icing
400 gm tepung gandum
2 -3 s/b air sejuk petiais [cold water]
Hiasan
kuning telur
Cara
1. Masukkan tepung gandum, majerin dan shortening dala mangkuk.
2. Ramaskan sehingga menjadi saperti serbuk roti.
3. Masukkan air sejuk sedikit demis edikit dan gaulakn rata.
4. Rehatkan doh selama 20- 30 minit dalam petisejuk.
5. Keluarkan doh dan ambil sebesar bebola ikan.
6. Masukkan dalam acuan pie dan buatkans saperti kulit pie.
7. Bakar dalam oven suhu 180 selama 10 minit.
8. Keluarkan dan masukkan inti epal.
9. Leperkan doh dan buatka saperti jalinan atas mangkuk pie.
10 Sapukan kuning telur.
11. Bakar lagi selama 10 minit dan kelihatan garing. |

1 tablespoon milk
2 slices white bread
salt and pepper to taste (optional)
1 slice American cheese
DIRECTIONS
1.Crack the egg into a microwave-safe cereal bowl and whisk in the milk. Season with salt and pepper. Cook in the microwave on 100% power for 1 to 2 minutes, or until cooked through.
2.While the egg is cooking, toast the bread. Use a spoon to remove the cooked egg from the bowl and set it on one piece of toast. Top with a slice of cheese and the other piece of toast. Cook in the microwave until cheese is melted, about 15 seconds. |

•1 medium eggplant, peeled and cut up
•1 teaspoon salt
•water
•3 tablespoons butter
•2 to 3 tablespoons grated onion
•1/4 teaspoon salt and 1/8 teaspoon freshly ground black pepper
•1 egg
•1/3 cup half-and-half or milk
•1/2 cup coarse cracker crumbs, saltines
•3/4 cup grated Cheddar cheese or Monterey Jack mixture
Preparation:
Cook eggplant in boiling water with the 1 teaspoon salt until tender. Drain and mash. Add butter, grated onion, and 1/4 teaspoon salt and pepper; blend well. Whisk egg with milk; stir into the eggplant mixture. Stir in cracker crumbs and 1/2 cup of the cheese. Bake in a lightly buttered 1-quart casserole at 325° for 35 to 45 minutes, or until set in center. Or, bake in 4 lightly buttered 6-ounce ramekins for individual servings. Sprinkle with remaining cheese and continue to bake until cheese is melted and browned. |

3. Transfer the skillet to the preheated oven and cook the frittata until fully set, about 15 minutes.

Deep-fry the sweet potato slices, a layer at a time, until golden brown and crisp, about 5 minutes. Remove with a slotted spoon, and drain on paper towels.
