A burrito (pronounced /bəˈriːdoʊ/ in the US but actually correctly pronounced /buˈriːtoʊ/), or taco de harina, is a type of food found in Mexican and Tex-Mex cuisine. It consists of a flour tortilla wrapped or folded around a filling. The flour tortilla is usually lightly grilled or steamed, to soften it and make it more pliable. In Mexico, refried beans, Mexican rice, or meat are usually the only fillings and the tortilla is smaller in size. In the United States, however, fillings generally include a combination of ingredients such as Mexican rice, beans, lettuce, salsa, meat, avocado, cheese, and sour cream, and the size varies, with some burritos considerably larger than their Mexican counterparts. Burritos enjoy an immense following that rivals those of hot dogs, hamburgers, pizza and other fast, convenient foods.
The word burrito literally means "little donkey" in Spanish, coming from burro, which means "donkey". The name burrito possibly derives from the appearance of a rolled up wheat tortilla, which vaguely resembles the ear of its namesake animal, or from bedrolls and packs that donkeys carried.

Ingredients
* 1/4 cup chopped onion
* 1/2 cup butter or margarine
* 2 pounds red potatoes, cut into 1/2-inch cubes
* 12 eggs, lightly beaten
* 1 teaspoon garlic salt
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 2 (4 ounce) cans chopped green chiles, drained
* 12 (8 inch) flour tortillas, warmed
* 2 cups shredded Cheddar cheese
Directions
1. In a large skillet, saute the onion in butter until tender. Add the potatoes; cover and cook for 15-20 minutes or until tender. In a bowl, combine the eggs, garlic salt, salt and pepper; pour over potatoes. Cook and stir over medium heat until the eggs are completely set. Stir in chilies. Fill each tortilla with about 3/4 cup of the egg mixture and 2 heaping tablespoons of the cheese; roll up tightly. Serve immediately. |
