Being a true advocate for healthy eating and living we of course wanted to find out what she likes to put on her plate. Let's take a look. Breakfast "I rise at 5am and go for a run to energise my body and clear my mind. It's a form of meditation for me — I always have my best ideas when I'm running and it sets me up for a day of working on my novels. I have a short black before I run and a couple of glasses of water. I run for about an hour swapping LSD runs with interval training and hill training on different days. At 7am I have an egg white omelette with spinach, asparagus, red capsicum, mushroom, quinoa and a few slices of avocado. I also have green tea and guzzle water." Morning Snack "I have a mid-morning snack around 10am. While I'm working, I will have a container with hearty homemade tabouli with a can of tuna in spring water. I also keep red capsicums that I eat like apples during the day. I continue to drink green tea whilst I write." Lunch At 1.30pm I have grilled chicken breast cooked in coconut oil with quinoa, green peas, onion, ginger and mint salad. I may have also have a piccolo." Afternoon Snack "At 5pm I need a sugar boost before I go to Taekwondo. I usually have a small bowl of blueberries and banana with cottage cheese, flaxseed oil, walnuts and fibre toppers. Or, a handful of pumpkin seeds or flaxseeds with two cups of blueberries and natural Greek yoghurt." Dinner "Dinner is 8.30pm, which is quite late after my blackbelt Taekwondo classes. I love a fillet of white fish — basa, swordfish, pink ling or trivelli — cooked in coconut oil with salad of spinach, roast pumpkin, toasted pine nuts with a drizzle of balsamic vinegar." Dessert "I only treat myself with dessert when I go out to restaurants for dinner. I never have dessert at home on a training/week night." Popsugar
