Ingredient
143g fresh milk (I used HL low-fat fresh milk)
35g egg
25g caster sugar
5g salt
250g bread flour
4g Instant yeast
38g butter (unsalted)
How I did it:
1. Place milk, egg, followed by caster sugar, salt, bread flour and yeast into the pan of the bread machine. Set to Dough function. Add in the butter after 8 ~ 10 mins into the kneading cycle. Continue to let the bread machine do the kneading. Stop the machine after the kneading cycle. Re-start the machine and let the dough knead for another 10mins before stopping the machine.
2. Remove dough from the bread pan, let it proof in room temperature in a mixing bowl, covered with cling wrap. Let proof for 60mins.
3. Remove dough and punch out the gas. Divide dough into 3 equal portion. Roll and shape into balls. Let the doughs rest and relax for 15 mins. (this 'relaxing' time is needed so that the dough will be easier to roll out and shaped).
4. On a lightly floured surface, flatten one dough and roll out into a longish shape. Roll up the dough swiss-roll style. Do the same for the two remaining doughs.
5. Flatten the rolled-up dough and roll out again into a long rectangular shape. Roll up tightly, and make as many rolls you can, swiss-roll style for the second time. Do the same for the two remaining doughs.
6. Place doughs in lightly greased bread tin/pan. Let the doughs proof for the second time, until it fills up 80% of the tin/pan. Cover with cling wrap.
7. Bake at pre-heated oven at 180 ~ 190 deg C for 30 to 35mins. (I set mine to 200 deg C as my oven temperature is always on the low side.)
8. Unmould the bread immediately when removed from the oven. Let cool completely before slicing.
my cara :
143 g round up to 145g
35g egg is one medium egg.
4g yeast is one tea spoon.
38g butter round up 40g
1. mix flour, yis, salt sugar. add in egg, milk... uli till combined. add in butter, akan rasa licin laa, uli uli sampai abt 40 minits. uli guna palm sampai elastic.
the rest follow 2-5
i use pensonic oven & bread tin, abt 20 minutes, i remove the lid, so that kat atas tu brown. kalau tak der lid, i think kena check kang hangit bahagian atas. |

Yogurt Bread
Ingredients
250g bread flour
15g sugar
3g salt
3g yeast
100g flavoured yogurt (I've used Mango yogurt)
60g fresh milk
25g egg (about half an egg)
30g butter
Method
1. Place all dry ingredients into the VM and mix for 10sec using variable speed 5.
2. Add in all wet ingredients and mix for 3 secs to form a dough.
3. Switch to high speed. Knead dough by quickly turning the machine ON and OFF a few times. Stop the machine and use a wet spatula to scrape the dough from sides of container, pulling the dough toward the center of the mixture. Remove spatula and repeat the kneading process until the dough form a ball on top of the blades. Knead the dough for another 3 more minutes.
4. Invert the container over a slightly greased large bowl to remove the dough. Shape the dough into a ball. Cover the bowl with a damp cloth or cling-wrap and leave it to proof in a warm place till double its size (about 1 hour).
5. When proofing is completed, punch down the bread dough to release the air.
6. Divide the dough into small portions of about 48g. Shape each portion into a smooth ball and placed them into a loaf pan.
7. Cover the loaf pan with a cling wrap and allow the dough to go for second proofing until double its size again.
8. Egg wash the top of the buns and sprinkle some sesame seeds on top of each small bun.
9. Bake in preheated oven at 170-180C for 20 minutes until the top turns golden brown.
10. Remove bread from loaf pan to cool completely.
Note:
- This recipe can also be baked into a loaf. I would suggest baking the loaf at 160C for about 30mins.
- The dough is not sticky and is hence good to use for shaping to make into buns. |

Tak kisah laa sha.. aku ni pn patutnya kena asah balik bakat baking 'bekong' ni setelah sekian lamaa ditinggalkan.cuma seru tu tak sampai .. pesal ntah.. maybe nak selongkaar balik gadget2 yg tah mana2 tu jadik masalah bosar kot. kekekeke. Duit aku ..terpaksa aku penuhi hajat mak aku dulu... dia sibuk nak vantage warmer set..
abish $450..waaa. .kalau aku ambik breadmaker dah buleh ambik yg kenwood brand..
la ni ni brand impress cosway pon tak lepas!! |
