2a.Terang sket ttg pic kt ats tu. Chinese cabbage leaves filled with sushi-rice If you ask me why I don’t just make sushi rolls, it’s because I’m very allergic to seaweed and don’t like the taste of it. In general I’m not a fan of Japanese food. But once in a while I feel like eating sushi rice or having a miso soup, and I just make it the way I like it. Here I make sushi rice in a ‘coat’ of Chinese cabbage leaves. The wavy lines of the cabbage give these little rice cakes a special look which is nice if you want to serve white rice for a special occasion. Once again my flexible silicone muffin baking form came in handy as you can see in the picture.
1 Chinese cabbage
200 g (1 cup) sushi rice, cooked
3 tsp mirin
2 tsp shoyu soya sauce salt to taste about 100 g tofu
sesame oil
soya sauce to taste
sesame seeds, toasted
Separate the cabbage leaves and steam them until they are soft. Cut the tofu into small thin pieces in the length of the muffin cups. Have about 4 pieces of tofu for each cup. Fry the tofu in sesame oil with a little soya sauce to taste. Mix the cooked rice with the mirin and soya sauce. You can add a little salt to taste.
Now cover the sides of the muffin form cups with the Chinese cabbage leaves. Slice the leaves if they are too wide or long, as long as the curly parts of the leaves are on top of the cups.
Now place the tofu pieces upright in the center of a cup, holding them with one hand. I have about four pieces of tofu per cup. With the other hand fill the rest of the cup with the rice. To do this use a teaspoon and press the rice down firmly into the cups. The tofu should be seen at the top, the rice being level with the tofu.
Now decorate with some toasted sesame seeds. I toast them shortly in a frying pan without using oil.
Carefully take the rice cakes out of the form.
