C) In French cuisine, a quiche (IPA: [ki:ʃ]) is a baked dish that is based on a custard made from eggs and milk or cream in a pastry crust. Usually, the pastry shell is blind baked before the other ingredients are added for a secondary baking period. Other ingredients such as cooked chopped meat, vegetables, or cheeseare often added to the egg mixture before the quiche is baked. Quicheis generally an open pie (i.e. does not contain a pastry covering), butmay include an arrangement of tomato slices or pastry off-cuts for adecorative finish. Quiche can be eaten warm but is more commonly eatencold, making it a suitable component of the food served in a typicalsummer picnic.
D) RESEPI QUICHE
Ingredients For the pastry
175g/6oz plain flour, plus extra for dusting
salt
75g/2¾oz butter, plus extra for greasing
(alternatively use ready made pastry)
For the filling
250g/9oz English cheddar, grated
4 tomatoes, sliced (optional)
200g/7oz bacon, chopped
5 eggs, beaten
100ml/3½fl oz milk
200ml/7fl oz double cream
salt
freshly ground black pepper
2 sprigs of fresh thyme
Method 1.To make the pastry, sift the flour together with a pinch of salt in alarge bowl. Rub in the butter until you have a soft breadcrumb texture.Add enough cold water to make the crumb mixture come together to form afirm dough, and then rest it in the fridge for 30 minutes.
2. Rollout the pastry on a light floured surface and line a 22cm/8½inchwell-buttered flan dish. Don't cut off the edges of the pastry yet.Chill again.
3. Preheat the oven to 190C/375F/Gas 5.
4. Removethe pastry case from the fridge and line the base of the pastry withbaking parchment and then fill it with baking beans. Place on a bakingtray and bake blind for 20 minutes. Remove the beans and parchment andreturn to the oven for another five minutes to cook the base
5. Reduce the temperature of the oven to 160C/325F/Gas 3.
6.Sprinkle the cheese into the pastry base and add the sliced tomatoes ifyou are using them. Fry the bacon pieces until crisp and sprinkle overthem over the top.
7. Combine the eggs with the milk and cream in abowl and season well. Pour over the bacon and cheese. Sprinkle thethyme over the top and trim the edges of the pastry.
8. Bake for 30-40 minutes or until set. Remove from the oven and allow to cool and set further.
9. Trim the pastry edges to get a perfect edge and then serve in wedges. |

Bahan-bahan:
150 gram mentega – cairkan dan tapis
100 gram daun bayam – dicincang
6 biji kuning telur
2 sudu makan jus lemon.
10 keping kulit tart (rujuk resepi tart telur)
Sos telur (rujuk resepi tart telur)
Bahan inti:
200 gram daging
30 gram lobak merah
30 gram seleri
50 gram bawang besar
5 biji cendawan butang
½ cawan tomato puri
1 helai daun salam
5 sudu makan minyak masak
½ sudu makan garam
Cara penyediaan:
Untukinti : Panaskan minyak dalam kuali. Tumis bawang besar, lobak merah danseleri sehingga naik bau. Masukkan daging dan tomato puri. Setelahdaging masak, masukkan daun salam dan garam. Gaul rata hingaa hampirkering.
Masukkan bayam dan sos telur ke dalam inti daging dan gaul rata. Isi kulit tart dengan campuran inti ini
Bakar dalam ketuhar pada suhu 160 C selama 15 minit. Hidangkan bersama sos telur. |
