Ingredients
For the filling

150g dragon fruit puree
3 tsp agar-agar powder
60g sugar
1 tbsp UHT milk
1½ tbsp white sago pearls, washed and soaked for 4–5 minutes
150ml water
Small round plastic containers or tart moulds


Jelly mooncake skin
4 tbsp agar-agar powder
125g castor sugar
500ml water
3 pandan leaves, shredded and knotted
100ml UHT milk
1/4 tsp pink colouring
Round or square plastic mooncake moulds


Jelly Egg Yolks
Combined
1½ tsp agar-agar powder
75g castor sugar
1/8 tsp salt
160ml water

2 pandan leaves, shredded and knotted

Mixed together in a small bowl
100ml milk
1 tsp custard powder mixed together in a small bowl
A few drops red and yellow colouring

Ball-shaped ice-cube trays

A. Springs Roll Skin:

1) Sift together the dry ingredients.

2) Mix in the rest of the ingredients.

3) Knead the dough. It should have a bouncy texture, and should stick to your hand.

4) Heat up a wok, without oil, and make sure to use a non stick pan, as it is easier.

5) When the wok is hot, spread the dough around the wok in a thin layer (use your hand as the dough is still sticking to it).

6) Size is about 6 inches.Remove when cooked (roughly around 30 seconds).

B. Filling:

1) Heat oil and fry garlic till fragrant.

2) Add in meat, mix vegetable, soya sauce, salt, pepper, turnip and prawns, fry till soft.

3) Whisked lightly eggs and add in.

4) Reduced heat and till gravy is almost dry. Put aside to cool.

C. Sweet Sauce:

1) Grind fresh red chili, garlic in blender.

2) Fry blended chilies a while, add in sweet chili sauce.

3) Add in plain water.

4) Stir well until thick then toss in sesame seeds. Put a side.

To roll popiah:

1) Place 1 pc of Chinese lettuce onto the skin.

2) Place 2 tablespoon of the filling onto the lettuce.

3) Fold left and right end corners and continue rolling tightly until the end. Paste with cornstarch glue*.

*50g cornstarch mixed with 2 tbsp warm water(to make glue).

4) Fry in a deep frying oil until golden light brown.Toss and serve while hot.

225gm. plain flour
                          2 tspn. salt
                          2tblspb. vegetable oil
                          80 ml warm water.
                        Mixflour and salt into a bowl. Make a well into the centre and add the oiland enough water to make a firm dough. Knead the dough on a flouredsurface until smooth and roll into a ball. Cover in plastic wrap andset aside at room temperature for 30 minutes.
                        Divide thepastry into 12 equal pieces. Roll each piece into a ball and roll outinto a circle of 15 cm. Divide this circle into two equal pieces with aknife.
                        Brush each edge  with a little water and form a cone shape around your fingers, sealing the  dampened edge.
                        Fill the cases  with a tblpns of your chosen mixture and press the two dampened edges together  to seal the top of the cone.
                          Deep fry the  samosas in hot oil until crisp and brown take out and drain on a paper towel.


Vegetable Samosa FIlling                        
                  1 Potato finely  diced (5 to 10 mill cubes)
1 carrot finely  diced - as above
2 cloves of  crushed garlic.
1 Onion finely  chopped
1 Cup of frozen  peas
1 tblspn  vegetable oil
2 tspn curry powder  or your own spices according to taste
Salt, Pepper to  taste.
100ml of  vegetable stock.
                        Heatthe oil in a frying pan, add the onion and garlic, mix in  the spicesand fry until soft. Add the vegetables, seasoning and stir well untilcoated. Add the stock, cover and simmer for 30 minutes until cooked.
                        Now it's time for the pastry.

FRIED BANANAS
1/2 c. flour
1 tsp. cinnamon
6 bananas, sliced lengthwise
2 tbsp. shortening
Mixflour and cinnamon together. Thoroughly coat each piece of banana withmixture. Heat shortening in medium skillet. Brown floured bananas.Slowly turn them once. Remove to heated platter. Sprinkle with sugar.

Bahan Kulitnya:
600gm tepung gandum
150gm tepung beras
2 biji telur ayam
2 cawan air
sedikit kapur

Bancuh semua bahan diatas (kalau boleh blender supaya tepung tak berbiji (bergentel).
Panaskan minyak dalam periuk agak besar sikit utk minyak penuh. rendam acuan dalam minyak supaya panas sebelum celup dalam bancuhan tepung tadi. ambil sesenduk taruh dalam mangkuk kemudian celup acuan yg telah dipanaskan tadi kedalam mangkuk tadi agak-agak setengah dari acuan. takut susah nak lekang pulak kalau celup penuh. dah lekang dari acuan , goreng seketika agak kekuningan. angkat dan toskan. betul betul sejuk baru simpan dalam bekas kedap udara atau tin. caranya macam nak buat kuih loyang saja.

Bahan inti:
1 biji sengkuang }
1 batang lobak merah } dihiris nipis panjang
1 biji timun }
2 biji telur
sedikit bawang goreng

tumis bersama telur dan bawang goreng hingga kering - toskan.

Sos cili
50gm cili kering }- dikisar
5 ulas bawang putih }
1 camb. cuka
sedikit air asam jawa
garam/ gula secukup rasa

masak kesemua bahan tersebut hingga pekat.

***jika suka sosnya boleh diganti dengan kuah kacang.
