Almond Snow Cookies
1-1/4 cup soft butter
1/2 cup shortening
1 cup granulated sugar
2 eggs
3/8 teaspoon LorAnn almond oil or 2 to 3 tsp. almond extract
1 cup finely ground blanched almonds
3-1/2 cups sifted flour
Confectioners' sugar Cream shortening, butter and granulated sugar; add eggs and beat until light. Mix in almond oil and ground almonds. Add flour to creamed mixture and mix thoroughly. Chill dough or not.
When ready to bake, preheat oven to 325 F. Scoop dough into small balls (I use a 1-1/4" ice cream type scoop) and place on ungreased baking sheets about 2" apart. Slightly flatten top with a dampened cloth-covered glass. Bake until set but not brown, about 14-16 minutes. Sift confectioners' sugar over cookies as soon as you take them out of the oven. Cool on cookie sheet. When thoroughly cool, but not cold enough to stick to cookie sheet, remove cookies from cookie sheet and roll in additional confectioners' sugar. Note: Recipe by Kathy Smith of Lincoln Park, NJ: "I learned to make cookies from my mother, who made approximately 40 different varieties at Christmas. I only make 15 or 20 different varieties. This year I started making the dough in October and had 10 varieties in the freezer when I decided that was enough and I was definitely not going to try anything new. That was a laugh - as soon as I sent the e-mail with my intentions to my siblings, I saw a wonderful recipe for toasted pecan shortbread and made it. Last week I baked some of most of the varieties in the freezer for my sister from Maine (who will not be in NJ for Christmas) and in baking and tasting the Fingerklatschen, I came up with the idea of combining that recipe with my mother’s very fragile Almond Fingers. They were a hit at Thanksgiving, thus the Almond Snow Cookies."

Minnie's Coffee Recipe
Makes 4 servings
What you need:
· ¼ Cup water
· 3 Tablespoons brown sugar
· 2 Tablespoons cocoa powder
· 4 cups strong, hot coffee
· 4 Tablespoons whipped cream for garnish if desired
What you do - 1. Put water, brown sugar and cocoa powder in saucepan and heat over medium-high heat.
2. Stir frequently while bringing to a boil.
3. Boil for 5 minutes until thick and smooth.
4. Spoon 2-3 teaspoons of cocoa mix in each of 4 coffee mugs.
5. Pour hot coffee into each mug, filling close to the top.
6. Float a dollop of whipped cream on the top of each mug (if desired |

2 (14-ounce) cans chilled unsweetened coconut milk
1 cup plus 3 tablespoons sugar
1 cup chilled half and half
Whisk coconut milk, sugar, half and half in medium bowl until sugardissolves. Transfer mixture to icecream maker. Process according to manufacturer's instructions.
Transfer ice cream to container; cover and freeze until firm, about 3 hours.(Can be prepared 3 days ahead.) |

Preparation
MILK JAM:
1. Reduce cream, milk, sugar, condensed milk, and dry milk to 3 cups in nonreactive saucepan set over medium heat; remove from heat.
2. Strain gelatin; add to milks; pour onto sheet pan lined with parchment paper; freeze overnight.
3. Cut out circles with 2" cookie cutter; reserve in freezer.
FROZEN MILK:
1. Bring all ingredients to a boil; remove from heat; chill.
2. Place in ice cream maker; process according to manufacturer's instructions; place in nonreactive container; cover with plastic wrap; freeze.
CHOCOLATE FRENCH BROWNIE:
1. Heat oven to 350.
2. Mix butter, sugars, and praline until smooth; whisk in eggs one at a time; whisk in vanilla.
3. Sift flours, cocoa, and cornstarch together; fold into butter mixture.
4. Line sheet pan with parchment paper; spread batter on sheet pan; bake until center is firm (approximately 8 minutes); remove from oven; cool to room temperature; cut into 2" circles with cookie cutter; reserve.
CHOCOLATE MOUSSE:
1. Place chocolate in nonreactive bowl; reserve.
2. Scald milk, cream, and sugar in nonreactive saucepan.
3. Place egg yolks in a bowl; temper with some milk/cream; add remaining milk/cream; return to saucepan set over medium heat; cook to 180 degrees, whisking constantly; pour over chocolate; let sit until chocolate melts.
4. Work with hand blender until temperature drops to 104; fold in whipped cream; reserve.
ASSEMBLY:
1. Set 12 ring molds on sheet pan lined with parchment paper; fill each halfway with chocolate mousse; push 1 piece milk jam into mousse; add more mousse; push 1 brownie into mousse; level top, scraping off excess mousse with spatula; freeze.
2. To serve, let fondants sit at room temperature 1 hour; remove ring; center 1 fondant on each plate; garnish with 1 scoop frozen milk; dust frozen milk with cocoa powder. |
