The question you ask is like why a person inside a dark room walk at one direction and finds another wall. use common sense a bit.
Christianity and Islam comes from the same source (Judaism) so a person who have been living a Christian or a Muslim will only look at the something similar to what he believed in. And since both belief system dislikes Judaism (who they treat as enemies), then they will not look anywhere except Christianity or Islam as their substitute. They will not look at Hinduism or Buddhism because they were brainwashed into thinking those belief system are paganism and holds no true. And because they fear hell, they will not join Atheism.
